Pork Curry

1 tablespoon all purpose flour
1 teaspoon salt
1-1/2 lbs sweet potatoes, in 3" pieces
1 onion, chopped
2 cloves garlic, minced
1 14 oz can coconut milk
1/2 cup raisins
2 tablespoons curry powder
1 1/2 lbs pork rib end roast, cubed
2 green apples cut 1/2" pieces
2 ribs of celery, 1/2" pieces
1 teaspoon grated ginger, fresh
1/2 cup apple juice
2 tablespoons chopped cilantro
cooked couscous or rice

Combine flour, curry powder and salt. Add pork, toss to coat. Place sweet potatoes, apples onion, celery, garlic and ginger in slow cooker. Top with pork.  Add coconut milk, apple juice and raisins. Cover, cook on low about 8 hours.  DO NOT LIFT LID while cooking.  Stir in cilantro if desired when pork is cooked. Place couscous or rice on serving plate, top with pork mixture and serve.
